Vitality, comfort, strength and regeneration is our bodies norm, so long as we stay attuned to Her - so long as we work with Her, instead of place egoic demands on Her.

Daily Core Integration Exercise for You

FOOD AS MEDICINE

Easy Lentil Potato Soup

Oh my goodness! This is by far my favourite dish of the season so far! I’ve been craving the earthiness of these combined ingredients along with a soft tang and sweet robust mix of flavours…I’m curious to hear of you like it!

INGREDIENTS

  • 1 tbsp coconut oil (or just saute veg in water)

  • 6 cloves garlic — minced (I went heavy on the garlic this time)

  • 1 cup diced yellow onion

  • 1 carrot, large — 3 - 4 oz

  • 2 cup freshly roasted tomatoes

  • 1 1/4 cups lentils — I used a mix of green, red split and black lentils, but green only work great.

  • 1 cup chick peas

  • 12 oz potatoes — cut into bite sized pieces

  • 2 tsp salt

  • 2 tsp cinnamon

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1/4 tsp black pepper

  • 4-8 cups of broth (I used homemade so we get the robust flavour

  • 4-5 cups water (depending on your consistency desire)

  • Maple syrup to taste (if you want) - Jude added a tiny bit to his!

  • Squeeze lots of lemon on top just before serving

  • Garnish with fresh basil or cilantro

DIRECTIONS

1. Heat oil (or just use water) in a large pot or Dutch oven. Add onion and cook for 1 minute. Add garlic and carrots. Cook for 2-3 minutes, stirring frequently, to prevent burning. 

2. Add in the roasted tomatoes, and lentils. Cook for 1 minute. Add potatoes. Pour 4-8 cups of water on top. Add all spices. Cover and bring to a boil. Reduce heat to medium-low and simmer for 25-35 minutes, until the lentils are cooked and potatoes are tender.

3. Taste the soup and add more salt and pepper if needed. Squeeze fresh lemon and garnish with greens of choice (I Iove basil with this). Serve warm.


Instead for water, you can use vegetable or chicken stock (broth) for more flavor.
You can add 1 bay leaf if you are a fan of the flavour.

Stepping Stones are our weekly offerings to help keep you on a path that feels good. They are delivered in a way that harmoniously reflects and activates the constant dance between the divine feminine and masculine and the mind-body- spirit-nature connection. You can think of these as life-serving skills, insights and resources to invite into your life.
The Stepping Stones are placed along a spiral path, so they can be metabolized and integrated at any point in your journey as a nurtured mother. 

Food As Medicine: 
We’re living in a time where our physical, mental and spiritual health is being tested by our modern food and the systems that try to control it.
So much of what we’re sold as food isn’t actually food (even all that ‘health food’ stuff), so the more that we can view food as vessels for high vibe life force energy, the more we can enjoy a deeper relationship with the food that fuels ours and our families bodies. 
Each week I will be including some of my fave Food As Medicine recipes for you, and the bodies that you cherish.
